Zesty Seafood Spaghetti (serves 4)
Ingredients:
16 oz spaghetti
2 tbsp extra virgin olive oil
1/2 lb prepared squid, cut into rings
1/2 lb raw tiger shrimp, shelled and deveined
1 red onion, finely chopped
1/2 lb mussels, scrubbed
1 cup dry white wine
1 jar of Saclà Originale Arrabbiata pasta sauce
small bunch of fresh parsley
lemon wedges
Method
1. Bring a large pan of water to boil. Add the spaghetti and cook until “al
dente”. Drain and set aside.
2. Meanwhile, heat the oil in a large frying pan with lid. Add the squid
and shrimp and cook over high heat for 1-2 minutes, until the squid is
tender and the shrimp have turned pink.
3. Add the red onions to the pan and cook for 2-3 minutes, until softened.
Add the mussels and cook for 1 minute.
4. Pour in the wine and bring to a simmer, cover and cook for 4-5 minutes,
until all of the mussels have opened. Discard any mussels that do not
open.
5. Stir in the Saclà Originale Arrabbiata and cook for 1-2 minutes.
Remove from heat and serve in bowls. Sprinkle with parsley, dress with
lemon wedge.
