ROMAN ARTICHOKE SOUP (Makes 2 servings)

Ingredients:


1 10.05 ounce jar of SACLÁ Seasoned Artichokes, finely chopped
cup fava beans
cup green peas
1 onion
2 tbsp. olive oil
2 cloves of garlic
1 tsp. of parsley
1 stalk of celery
1 cup stock
Bread
Parmesan Cheese
Salt and pepper to taste

Method:

Preheat oven to 350 degrees F.
Mince the onion, celery and garlic and sauté in a pot with the olive oil.
Add fava beans, peas and SACLÀ Seasoned Artichokes and simmer for 5 minutes.
Cover with the stock, bring to a boil and continue cooking for approx. 15 minutes.
Once the stock is completely absorbed and the vegetables are cooked, adjust with salt and pepper and the parsley. Transfer the soup to an oven dish and cover with a layer of grated Parmesan cheese. Place in an oven for 15 minutes.
Remove and serve with toasted bread.
